Soba Noodles with Peanut Dressing

Hello blog- it's been forever. As we are literally waiting on Baby Lane, I am attempting to get myself back cooking. Although I love Pinterest to collect recipes, hoping to keep track of what I am actually cooking.

I went on a hike yesterday with my friend Pollie (an amazing and natural cook- nothing like me) and she suggested that I try to cook one of her family stand by recipes- soba noodles with peanut dressing.

Here you go:
- Cook the soba noodles per package instructions (heads up- they cook super fast)
- Once the noodles are cooked- add lots of goodness to the noodles- snow peas, bell peppers, edamame, slaw mix, and tofu/chicken (just buy rotisserie chicken)
- Mix salad with Peanut dressing- see below...we even fried an egg on top!
- Serve cold- even better the next day.

Cilantro Peanut Dressing:
  • 1/2 cup peanut butter
  • 1/4 cup olive oil
  • 1/2 cup honey
  • 5 tablespoons of rice wine vinegar
  • 1-2 limes (or lemon) juiced
  • 1 garlic clove, minced
  • 1 inch of ginger, minced (cut off the peel)
  • 3 tablespoons of soy sauce
  • 1 tablespoon of sesame seed oil
  • 1/8 teaspoon red pepper flakes
  • handful of cilantro
Place all ingredients into a high powered blender, blend for 10-15 seconds until thoroughly blended.
